High Fiber Lentil Curry

Lentils form a hearty base for curries that are naturally high in fiber and work well for batch cooking. This recipe is included in our high-fiber dinner collection and is ideal for leftovers. This recipe is naturally gluten-free.

Ingredients

  • 1 cup dried lentils, rinsed
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon curry powder
  • 1 can diced tomatoes or coconut milk
  • 3 cups vegetables (cauliflower, spinach, bell peppers)
  • Salt to taste

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onion and cook until softened.
  3. Stir in garlic and curry powder.
  4. Add lentils, tomatoes or coconut milk, and vegetables.
  5. Simmer 30–35 minutes until lentils are tender.
  6. Season and serve.
