High Fiber Lentil Curry
Lentils form a hearty base for curries that are naturally high in fiber and work well for batch cooking. This recipe is included in our high-fiber dinner collection and is ideal for leftovers. This recipe is naturally gluten-free.
Ingredients
- 1 cup dried lentils, rinsed
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon curry powder
- 1 can diced tomatoes or coconut milk
- 3 cups vegetables (cauliflower, spinach, bell peppers)
- Salt to taste
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and cook until softened.
- Stir in garlic and curry powder.
- Add lentils, tomatoes or coconut milk, and vegetables.
- Simmer 30–35 minutes until lentils are tender.
- Season and serve.
