High-Fiber Chickpea Salad

Ingredients

  • 1 can chickpeas, rinsed and drained
  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Add chickpeas, cucumber, and tomatoes to a bowl.
