High-Fiber Bean & Vegetable Chili

A comforting, fiber-rich chili made with multiple types of beans and vegetables. This recipe is included in our high-fiber dinner collection and is great for batch cooking. This recipe is naturally gluten-free.

Ingredients

  • 2 cups mixed beans, cooked or canned
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 can diced tomatoes
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • Salt to taste

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onion and bell pepper and cook until softened.
  3. Stir in beans, tomatoes, and spices.
  4. Simmer 25–30 minutes, stirring occasionally.
  5. Adjust seasoning and serve.
