🍪 High-Fiber Oatmeal Cookies

These oatmeal cookies use whole grains and seeds to boost fiber while keeping the recipe simple and flexible.

Ingredients

  • 1½ cups rolled oats
  • ¾ cup whole-grain flour
  • ¼ cup ground flaxseed or chia seeds
  • ½ tsp baking soda
  • 1 tsp cinnamon
  • ⅓ cup maple syrup or honey
  • ¼ cup coconut oil or butter, melted
  • 1 egg (or flax egg)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix dry ingredients in a bowl.
  3. Stir in wet ingredients until combined.
  4. Scoop dough onto a lined baking sheet.
  5. Bake 10–12 minutes until lightly golden.
